Les informations sur l'origine du berlingot ne sont pas d'une grande précision. Cela remonterait au XVIIème ou au XVIIIème siècle d'après les historiens et spécialistes, sans autre certitude. On raconte qu'un Africain en costume de son pays vendait cette friandise les jours de marché, friandise qu'il fabriquait à partir de sucre cuit, chez un pâtissier de la ville, qui l'avait hébergé... Cet Africain arômatisait sa confiserie en y incorporant des extraits d'anis, de menthe, de café ou de citron, ingrédients encore peu connus en France à cette époque et qu'il rapportait de son lointain pays. Lorsqu'il fut vieux et avant de repartir chez lui, il confia sa recette à un pâtissier de la ville...

There are few informations about the "berlingot" origins. It would have been invented during the 17th or 18th century. Some people tell about an African man who used to sell this delicacy on market days, at Pézenas, a french town. He manufactured this delicacy with cooked sugar, thanks to a local pastrycook he lived at… This African man flavoured his confectionery by incorporating some extracts of anise, mint, coffee or lemon, ingredients that were quite unknown in France at that time. Later, when he was old, this African man gave his secret recipe to the pastrycook before going back to his country...
